Gluten-free sourdough is very different than working with wheat-based sourdough. Most of the products we sell use a brown rice sourdough starter to naturally leaven them. The process from start to finish for a loaf of bread takes no less than 30 hours. After the initial dough mix, the bread is long-fermented in the refrigerator for 18-24 hours to develop flavor.

How long will my bread last?
PGC sourdough breads contain no fillers, additives, or preservatives, which means the shelf-life is not long. Additionally, gluten-free breads are naturally drier. All breads are best consumed within 2-3 days or refrigerated then reheated.
How do I freshen up the bread?
Pop into the microwave for 20-30 seconds or into the toaster! Delicious with a smear of butter.
